We SWEAR It Tastes Better Than It Sounds: Chocolate Butternut Squash Bars

Don't be fooled by the butternut squash, these bars are slightly addicting!


Squash Bars

  • 1/2 cup Butter (Melted)

  • 2 eggs (Pasture Raised)

  • 1/2 cup Monkfruit Sweetener (or maple syrup)

  • 2 tsp pure vanilla extract

  • 2 Tbsp melted Coconut Oil

  • 1 1/4 cup Butternut Squash Purée*

  • 1 1/2 cup of Coconut Flour

  • 1 1/2 tsp Baking Powder

  • 1 tsp Pink Himalayan salt

  • 1 tsp Cinnamon

Chocolate Drizzle

  • 1/3 cup of Chocolate Chips

  • 1 Tbsp Coconut Oil


  • Preheat oven to 350°F

  • Coat 9x13 baking dish with coconut oil

  • Soften squash in one of three ways listed below

  • Whisk eggs and Monkfruit Sweetener in a large bowl

  • Next, add in melted butter, melted Coconut oil, and vanilla

  • After, fold in squash purée

  • In a separate bowl, add flour, baking powder, cinnamon

  • Mix dry and wet ingredients together

  • Cook for approximately 25-30 mins until cooked. Let cool.

  • Once the bars are cooked, melt 1/3 cup chocolate chips with 1 Tbsp coconut oil in small bowl. Drizzle mixture on top of bars & ENJOY!

*Purée squash one of three ways:

  1. Cook squash in pressure cooker, scrape out inside and mix up until smooth

  2. Cut the squash into cubes, boil until tender

  3. Bake squash in over and mix after soft
