Quinoa & Lentil Burrito
You have to give this fiber & protein packed burrito a shot!

Ingredients
2 Organic Chicken Breasts (optional for added protein)
Seasoning: 1 tbsp nutritional yeast, 1/4 tsp chili powder, 1/4 tsp garlic powder, salt & pepper
2 Avocados
1 c Black Lentils (cooked according to package)
1 c Quinoa cooked in Bone Broth (best flavor)
4 tbsp Dairy-Free Sour Cream (we use plain coconut yogurt)
1/4 c Green Onion (optional)
1 Red Bell Pepper (can sauteé in oil or leave raw, based on preference)
4 Large tortillas (We use Gluten-Free)
Salt & Pepper
Directions
Cut chicken into cubes, season and cook until tender
Cook quinoa according to package (replace water with bone broth)
Cook lentils according to package (once cooked, add 2 tbsp olive oil, salt & pepper for flavor)
Cut tomatoes & onion, set aside. Sauté pepper or leave raw.
Mash avocados in a small bowl & add a dash of salt and pepper.
Heat tortillas in pan
Combine all ingredients in the tortilla and enjoy!
