Tacos with a Twist
You have to try these tacos with homemade sweet potato tortillas!
2 part recipe!
Sweet Potato Tortillas
Makes about 8 tortillas
1 Sweet Potato (you won't be using the skin)
1 c Flour (we use GF cup for cup flour)
1/4 c Olive Oil
1/4 c Water
1/4 tsp Salt
Cook sweet potato (Pro tip: Microwave sweet potato for 5 mins then put in oven and cook at 350°F for 10 mins for best flavor)
Remove skin and put the rest of the sweet potato in a medium mixing bowl
Add flour, olive oil, water and salt to bowl and mix until a dough forms.
Place dough in fridge for 20-30 mins.
Divide dough into 8 small balls & either roll out on parchment paper or you can just form tortillas on pan
Add avocado oil to pan.
Put tortillas in pan on medium heat. Cook on each side for 3-4 mins or until golden brown.
Serves 4 (2 tacos each)
Sweet potato tortilla (see recipe with directions)
2 c Wild Caught Shrimp
1 Med Tomato
Spicy Mayo (We use Primal Kitchen)
This is optional, but it brings all of the flavor together!
Salt & Pepper
Cook shrimp as desired (We place in air fryer at 350°F for 10 mins)
Mash avocados in a small bowl & add a dash of salt and pepper.
Cut cucumber & tomatoes into small pieces and put them in a bowl. Squeeze 1/2 lemon & add a dash of salt and pepper. To minimize the amount of liquid, drain the mixture after removing excess juice.
Cut the green onion into small pieces and set aside.
Grab a tortilla, add mashed avocado, shrimp, cucumber/tomato mix, spicy mayo & green onion.
