Salads Shouldn't Be Boring, So Try This Salmon Salad

Salmon is a great source of Omega 3 fats and Vitamin B: a recipe for good gut health!


Ingredients

  • 2 c Romaine or Iceberg Lettuce

  • 1/2 Tomato (sliced)

  • 1/3 Cucumber (sliced)

  • 1/2 c Sweet potato mash

  • Caesar Dressing (recipe in "Snacks")

  • 2 Tbsp Hummus

Directions

  1. Add romaine to the base of the bowl

  2. Bake salmon (350°F for 12-15 mins)*

  3. Cut cucumber & tomato, add to bowl

  4. Microwave or bake sweet potato, & once cooked, add to

  5. Add scoops of hummus

  6. Top with Caesar dressing


Notes:

  • This salad is a great using leftovers from the night before (Salmon and sweet potato for dinner)
