This lower carb "spaghetti" is great for those who want a filling meal without the carb load. Don't be fooled, we love a big bowl of pasta too!
1 Whole Spaghetti Squash
Extra Virgin Olive Oil
Goat Cheese (or vegan cheese)
Ground Turkey or Chicken
Cut* squash and drizzle olive oil on each side
Place each side face down on a lined baking sheet and bake spaghetti squash in oven at 400°F for 30-40 mins (until you can easily scrape the contents out)
On a pan add olive oil and red onion. Sauté the onion then add meat of choice. Once the meat is cooked, add spinach and goat cheese. Cook until spinach is wilted (approx. 1 min)
After spaghetti squash is cooked, let cool and scrape contents out of shell. Add desired amount to pan and mix everything together.
Place contents back into shell (as pictured) and snap a picture of your bowl!
